Have you tried a ceviche without fish? This is an Andean ceviche, instead of fish it has mountain grains like toasted corn, popcorn, chifles, onion, tomato, tomato juice, lime, and Andean chocho. Flavors that mix salty, citrus, sweet (an explosion of flavor). 

Dishes made with green plantain

Ecuadorian cuisine is also based on green plantain, such as “Tigrillo” which is cooked green plantain with fresh cheese and egg. We also have “bolas de verde” filled with cheese or pork, accompanied by a cup of coffee, it’s the best way to start the day with energy.

La Mariscal Artisan Market
